These chocolate-covered dates are exactly that: juicy Medjool dates filled with nut butter and coated in dark chocolate. A small dessert that requires no effort yet makes a special impression. Perfect for a quick treat or as a delicious accompaniment to coffee.

- 8 Medjool dates
- 8 walnut kernels
- 8 tsp unsweetened almond butter
- 50 g dark chocolate (min. 99% cocoa)
- 1 tsp desiccated coconut

Preparation
Lightly toast the walnut kernels in a dry pan until they release their aroma. Set aside and let cool.
Cut the dates lengthwise and remove the pits.

Fill
Fill each date with a teaspoon of almond butter and press in a walnut kernel. Carefully close the dates again and refrigerate.

Roughly chop the dark chocolate and melt it slowly over a water bath until smooth.

Dip the filled dates into the melted chocolate using a fork or tongs, let the excess drip off briefly, and place them on baking paper. Sprinkle with shredded coconut.

Let it cool down
Allow the dates to firm up completely. Then store them in a cool, airtight container.
